what is getting my through these days
My favorite "healthy food" now is a parfait I make for either breakfast or mid-day snack. It goes like this:
1 cup plain Greek yogurt
1/2 cup Ezekiel cereal (sprouted grain cereal, similar to Grape nuts, but more protein dense and more easily digestible)
1/3 cup blueberries
1 tablespoon pumpkin butter (from Trader Joe's. Any jam works, though)
a smidge of cinnamon
a dash of vanilla extract
1/3 cup chopped walnuts.
It is fabulous, delicious, filling and nutritious.

how funny! i am currently eating plain mountain high yogurt with TJ's pumpkin butter! i get the yogurt at costco, which is way cheaper than the flavored organic stuff i was getting at TJ's. the kids eat theirs w/strawberry preserves, but i remembered i had pumpkin butter in the fridge & thought i'd give it a try! it was good, but i'll definitely have to try it w/your additions! :)
I usually buy whole milk plain yogurt, then strain it for an hour or two to make it thick, like Greek Yogurt. Way cheaper than buying Greek Yogurt.
That sounds yummy! BTW, Aileen made your Butternut Squash Bisque and I got to taste it and it was *sooo* good. I plan to make it some time soon. What a perfect winter dish!
Nope. You lost me the second you said blueberries. Ew.
